Recipe: Halloumi Hummus Bites with Blueberry and Mint

Who needs bread when you have halloumi and hummus? These are words I never thought would come out of my mouth, but here I am. I love bread and cheese, and it has always been a go-to for me when it comes to easy entertaining. It takes no time to prepare, everyone loves it and let’s be honest, everyone loves a great overhead shot of a cheeseboard on Instagram. And then I discovered grilled halloumi. I hadn’t grilled halloumi many times before, but now that I know how easy it is, I pretty much have eliminated the need for bread because it’s so versatile! You can use it in salads or in a supporting role in a canapรฉ like these Halloumi and Hummus bites with Blueberry and Mint.
The grilled halloumi is a more delicious vessel than bread could ever be. Cut into small squares, the warm cheese is slathered in rich Summer Fresh Original Hummus and topped with blueberries and mint to give it a kick of freshness. Summer Fresh has several different hummuses to choose from like roasted red pepper hummus, avocado hummus or even sweet potato hummus, but the original hummus works best for this dish. The creamy hummus works great as the base spread for the halloumi bites; those plump blueberries nestle right in.
These bites can be presented as a great appetizer at the long-weekend BBQ coming up, or it can serve as a great hors d’oeuvre that will impress even the most “foodie” of in-laws. There are only five ingredients needed and it takes less than 10-minutes to make these juicy little bites.

Halloumi Hummus Bites with Blueberries and Mint
Ingredients
- 350 g Halloumi
- 1 227 g package of Summer Fresh Original Hummus
- 40-60 Blueberries to garnish around 1/2 cup
- Mint to garnish
- Olive oil
Instructions

Pre-heat the barbecue to medium high heat

Brush halloumi lightly with olive oil

Grill halloumi for 2 minutes on one side, flip and remove quickly before it melts

Let cool, but not for too long, it will get tough if left out too long!

Cut halloumi into 1 inch cubes

Spread hummus onto each cube

Garnish each piece with one blueberry and a mint leaf

Serve immediately

This looks like such a great gluten free appetizer that I can bring to my next girls night! I have quite a few friends who are gluten free so this will be a nice alternative. Plus Halloumi cheese is just amazing.
